Based on the 2018 vintage and disgorged in March 2021 without dosage, the new rendition of Dehours's NV Extra-Brut Oeil de Perdrix is only very delicately tinted (keen amateur cooks will think of the skin of a Roscoff onion). Exhibiting aromas of crisp stone fruits, white flowers, buttery pastry and subtle hints of honeycomb, it's medium to full-bodied, pillowy and seamless, with fine depth at the core, lively acids and a beautifully refined mousse.

The Dehours Œil de Pedrix Extra Brut is a unique expression of viticulture and oenology, reflecting the rich tradition and innovation in champagne production. This wine is remarkable for its composition, which includes 83% Meunier and 17% Chardonnay, a blend that combines white and red wines to create a distinctive profile. Sourced from vineyards in Mareuil-le-Port and Troissy, this champagne is a testament to the quality of the region.
Winemaking
The winemaking of this wine follows practices that respect biodiversity, such as working the soil and allowing grass to grow between the vines. Fermentation and ageing take place mainly in stainless steel tanks and in barrels for a small part, which contributes to its complexity and character. This champagne benefits from prolonged ageing on the lees, with natural clarification and no filtration. Bottling takes place in the summer, followed by 12 to 24 months of bottle ageing on the lees before disgorgement. Dehours Œil de Pedrix Extra Brut is characterised by a delicate, floral flavour profile, reflecting the character of Pinot Meunier, the emblematic grape variety of the Marne Valley and an iconic identity of its vineyards. This fresh and fruity rosé is aged in bottle for 15 to 25 months. The champagne has a dosage of 0 to 2 g/l, indicating its extra brut nature. It is recommended to be served in a large white wine glass above 10°C, and it is possible to decant it to enhance its qualities.
