Description
Billecart-Salmon Cuvée Elisabeth Salmon Brut Rosé is a champagne made from Chardonnay (50%) and Pinot Noir (50%) by the Billecart-Salmon winery in the Champagne region of France.
The Pinot Noir grapes used to make Billecart-Salmon Cuvée Elisabeth Salmon Brut Rosé come from the Montagne de Reims and the Grand Vallée du Marne and the Chardonnay comes from the Côte des Blancs and is vinified following the traditional method.
Winemaking
The grapes are hand-picked individually and separately. The 17% is vinified in oak barrels, the malolactic fermentation is partial and the second fermentation takes place where the wine matures on its lees for 10 years.
On the other hand, the dosage is moderate with 7 grams of sugar per litre to maintain the varietal characteristics of the grapes. In addition, a slow process is guaranteed where the aromas are extracted and the maximum expression of the different varieties is preserved.
Taste
On the nose, this champagne offers a rich and complex aromatic amplitude. On the palate it has a restrained, yet delicate and flavoursome strength and a full, fleshy structure- a perfectly balanced and ready-to-drink wine!
