Disgorged in the second quarter of 2022 with a dosage of 4.9 grams per liter, Billecart-Salmon’s NV Brut Sous Bois emerges from the glass with aromas of orchard fruit, pear, peach, nuts and spring flowers. It's medium to full-bodied, clean and pure, with tangy acids and pastry notes on the finish. Elegant, linear and fruit-driven, this Champagne can be enjoyed right now or cellared for another year or two. Base vintage; 2015 (60% of the blend and vinified in old barrels) with 40% of vins de réserve, the earliest vintage of which is 2006. It comprises 30% Pinot Noir sourced from Aÿ and Mareuil-sur-Aÿ, 40% Chardonnay from Côtes de Blancs grands crus and 30% Pinot Meunier from the Vallée de la Marne.

Description
Billecart-Salmon Brut Sous Bois is a unique and captivating cuvée, encapsulating mastery in the art of blending, evoking the spirit and ancestral skill of the original champagnes. This wine is vinified entirely in oak barrels and composed of the three traditional grape varieties of Champagne: Chardonnay, Pinot Noir and Meunier, in equal proportions. The Chardonnay comes from the Premiers and Grands Crus of the Côte des Blancs, the Pinot Noir from the Premiers and Grands Crus of the Montagne de Reims, Aÿ and Mareuil-sur-Aÿ, and the Meunier from the Vallée de la Marne.
Winemaking
The first fermentation of the must in oak barrels at low temperature and the inclusion of 30 to 35% of reserve wines contribute to the complexity and depth of this champagne. In addition, Billecart-Salmon Brut Sous Bois matures on the lees in the bottle for 6 to 7 years, giving it a unique texture and character.
Taste
Billecart-Salmon Brut Sous Bois dazzles with a radiant, crystalline appearance, a golden yellow colour with bright reflections, enlivened by fine, sparkling bubbles. On the nose, it offers a harmonious richness of expression, combining dried fruits, fresh citrus and white fruits with finely buttery notes. On the palate, this champagne reveals a spectacle of flavours, including toasty notes, little milk breads and toffee, creating an ambiance conducive to the enjoyment of great Champagne wines. Its strength of character and straightforwardness make it the ideal accompaniment to white meats or a mushroom sauté, best enjoyed at a serving temperature of 10°C.
