Winemaking
Aurore Casanova Les Petites Vignes Pinot Noir Puisieulx Grand Cru is made following an artisanal approach: fermentation is carried out with indigenous yeasts, preserving the identity of the terroir. Temperature-controlled stainless steel tanks are used to ensure a slow and precise fermentation, maintaining the primary aromas of the grapes. After the first fermentation, the wine undergoes a partial malolactic fermentation process, providing greater creaminess and softening its profile. Ageing on the lees lasts for a minimum of 36 months, allowing the wine's compounds to integrate harmoniously and gain in complexity. During this period, periodic lees stirring (bâtonnage) is carried out to intensify the texture and give the wine greater depth. Finally, disgorgement is carried out without dosage or with a very low dosage, respecting its pure and expressive character.
