Fermented with indigenous yeasts and aged on lees for 8 months. Addition of 40% of reserve wine for the second fermentation in bottle with a minimum ageing of 36 months and a final dosage of 7.8 g/l (Brut).

To speak of Champagne Aurore Casanova Aure is to speak of passion and bottled art. It is not just any champagne. It is the result of the meticulous work of Aurore Casanova, a woman who left the world of ballet to dedicate herself to another kind of expression: winemaking. And she does it with grace. In her small cellar in Mardeuil, Champagne, each bottle is a testament to her love of the land and authenticity.
Aurore Casanova Aure is an orchestration of 45% Chardonnay, 45% Pinot Noir and 10% Meunier. Each variety brings its own personality: the elegance of the Chardonnay, the structure of the Pinot Noir and the fruit of the Meunier. The vineyards grow on chalky soils, the same soils that have made Champagne an iconic region, bringing unmistakable minerality and freshness.

Winemaking

Aurore makes its champagnes with absolute respect for the vineyard. Fermentation takes place in stainless steel tanks to preserve the purity of the fruit. The wine then rests for 2 to 3 years in the bottle, refining its texture and gaining depth. With an Extra Brut dosage, it remains true to its style: elegant, vibrant and without artifice.

Taste

From the first sip, Aurore Casanova Aure envelops the palate with its fine, creamy bubbles. On the nose, notes of brioche, white fruits and a subtle hint of toasted almonds emerge, like that irresistible aroma that fills the kitchen when baking fresh bread. On the palate, it is pure balance: juicy fruit, vibrant acidity and a long finish that invites further enjoyment.
