Description
In the picturesque village of Puisieulx, nestled in the Montagne de Reims, is the"Les Petites Vignes" vineyard. This vineyard, planted in 1986, is dedicated exclusively to the cultivation of Chardonnay. The soils here are a mixture of clay and silt, settled on a hard limestone base at a depth of about 80 cm, with an east-facing exposure that makes the most of the morning light. These conditions allow the vines to develop remarkable complexity and mineral expression in their grapes, capturing the essence of their terroir.
Winemaking
Harvesting is done by hand, selecting the grapes at their optimum ripeness, ensuring that each cluster reflects the best of the year. After a traditional pressing, fermentations are natural and spontaneous, carried out in 228 and 400 litre oak barrels for a minimum of 11 months. This barrel ageing adds aromatic complexity and texture without masking the purity of the Chardonnay.
Aurore Casanova Les Petites Vignes Chardonnay Puisieulx Grand Cru is bottled without fining or filtration, allowing it to retain all its original structure and expression. It undergoes a second fermentation in the bottle and is aged on the lees for 2 to 3 years, which gives it a fine, elegant bubble. This process gives it remarkable longevity and the ability to evolve in the bottle, revealing new layers of flavour over time. The result is an Extra Brut with a minimal dosage, reflecting the purity and authenticity of the terroir, offering a genuine and refined experience to champagne lovers.
