Landi & Pérez is the project between two excellent winemakers of the Spanish new age of enology and viticulture: We are referring to Daniel Gómez-Jiménez Landi and Raúl Pérez; this project takes shape in the area of Cebreros, province of Ávila, thanks to the excellent old Garnacha vines, some of them over 70 years old, that exist in the area; Another of the peculiarities of one of the two plots where his wine El Reventóncomes from are the almost 900 meters above sea level where the vineyard is located as well as the special orientation of the same receiving only afternoon sun; the soils at that altitude are of slate composition as in practically all the narrow Reventón Valley with the exception of the lower part where granite is abundant.
Landi & Pérez elaborate their wine here partially with stems to later carry out a cold pre-fermentation maceration of one week in large capacity French oak tanks; after a maceration phase of approximately a month and a half the wine underwent malolactic fermentation in 500 liter barrels to later pass to the aging phase for 14 months; before bottling the wine practically does not undergo any alteration since it does not undergo clarification, stabilization or filtration processes, only a small addition of sulfur dioxide.
