Albillo variety has its origin in Valladolid, in the Spanish autonomous community of Castilla y León. This variety features good vigour though it is not much fertile so the crops are far from bountiful. With early both budding and ripening and grape clusters are medium-sized, its berries have a thin skin. It is pretty drought resistant but fragile in front of spring frosts, howbeit it acclimates well to sandy soils. It is also unaffected by any kind of pests and diseases.
Formerly the Albillo variety was used mainly for table wines but nowadays it is used to obtain golden coloured Albillo wines, scented to the nose, smoothly textured and with a faint sour taste in the end. Rarely are the Albillo wines fermented in barrels. Commonly the Albillo variety is used blended with other ones to enhance the bouquet of the final wine
