Parellada is one of the three principal varieties for Cava production (together with Macabeo and Xarel.lo). This is also the most important variety in the designations of origin Conca de Barberà, Costers del Segre, Penedés and Tarragona, and it is authorised in Mallorca, though there are not much plantations for still or sparking wines.
Parellada wines are aromatic, with a moderate alcohol level and delicate fruity acidity, so it is recommended to drink them while young.
