Ballot Millot Bourgogne Chardonnay is like a walk through the Meursault vineyards, under the Burgundy sun, with a glass in your hand and the breeze caressing your face. Ballot Millot Bourgogne Chardonnay, made by Domaine Ballot-Millot, a family winery with centuries of history, this Chardonnay needs no boast to conquer. Its grapes come mainly from Meursault, in soils rich in limestone, the secret of that elegant minerality that distinguishes the great Burgundian whites.

Winemaking

In the winery, Charles Ballot follows a philosophy of minimal intervention. The grapes are pressed whole, without crushing, in a slow process that takes more than three hours. The result? A pure must, without haste or artifice. No yeasts or enzymes are added, leaving the fermentation to flow naturally. The wine then rests for 12 months in French oak barrels, with just 20% new wood, to respect its freshness without stifling its essence.

Taste

From the first sip, Ballot Millot Bourgogne Chardonnay awakens the senses with its aromas of toasted almond, ripe pear and a subtle hint of peach. It is a wine that caresses the palate, displaying a silky texture but with vibrant nerve. The acidity is perfectly balanced, providing tension and freshness, while the finish is long, delicately floral and mineral, with a hint of that reductive elegance so characteristic of the region's great whites.
