40% whole clusters in stone cups and 60% destemmed by hand. Free-run fermented with 4–5 days of skin soaking. Pressing and end of fermentation in qvevri, large 20-hl oak foudres, 11-hl chestnut barrels, and stainless steel. Aged on lees for 8 months. Bottled unfined and unfiltered.
