Mingling aromas of cherries and red berries with hints of licorice, rose petals and spices, the 2020 Gevrey-Chambertin Ostrea is medium to full-bodied, deep and complete, with lively acids, powdery tannins and a long, perfumed finish. Derived from old vines in the commune of Brochon, it is, as usual, a touch more structured and tightly wound than the domaine's regular Gevrey cuvée.

Description
Trapet Gevrey Chambertin Ostrea stems from a deeply Burgundian idea: not simply to produce a village Gevrey Chambertin, but to encapsulate within a single bottle the mineral character of the Domaine Trapet’s old vines. At Trapet, the land is not merely a backdrop, but the source of everything. Ostrea comes from historic plots in Gevrey Chambertin and Brochon, including Champérier, which has been in the family since 1860 and features very old vines, some planted in 1913. Its name refers to Ostrea acuminata, a small fossilised oyster found in the subsoil – a marine trace that here becomes the wine’s signature. Jean-Louis Trapet, a pioneer of biodynamics in Burgundy, took this fidelity to the terroir to its ultimate conclusion. There is only Pinot Noir, but a Burgundy Pinot Noir that speaks through the stone, the tension and the silence. Gevrey Chambertin provides structure and nobility; the marly, calcareous and ferruginous soils, an unmistakable mineral vibrancy.
Production
Trapet Gevrey Chambertin Ostrea comes from 2.5 hectares spread across four plots, tended with the utmost respect for the vineyard. The cuvée encapsulates the essence of the domaine’s oldest vines. The winemaking process prioritises finesse over extraction: partial use of whole bunches, precise fermentation and increasingly restrained oak ageing, utilising demi-muids and a moderate proportion of new oak. The aim is not to impose a style on the wine, but to allow it to breathe through its fruit, salinity and chalky texture. Bottling preserves that blend of depth and transparency so characteristic of the great Burgundy wines.
Taste
In the glass, Trapet Gevrey Chambertin Ostrea does not seek to make an immediate impact. It opens slowly, with precise red fruit – tart cherry, raspberry and redcurrant – accompanied by violets, delicate liquorice, subtle spices and a distinct sensation of damp chalk and crushed stone. On the palate, it is not heavy, but rather taut and straightforward, with fine tannins, lively acidity and a mineral pulse that runs through the wine from start to finish. It has body, but no heaviness; fragrance, but no excess. The finish is salty, stony and persistent, leaving an impression of pure, serious and deeply terroir-driven Pinot Noir.
