Description
Some Fino sherries seek perfection through tradition, whilst others find it through daring. Toro Albalá Fino Eléctrico Bombilla was born at Toro Albalá as a joke that became part of its identity: the original winery was set up in the area’s first power station, and the locals used to say that the wine ‘had electricity’. Hence the name and that magnet-bottle shaped like a light bulb. But what is truly daring is not the glass: it is making a 100% Pedro Ximénez (yes, PX) fino and championing Montilla Moriles from its finest sub-region, Moriles Alto, with its white, limestone, almost chalky soils that bring light and salt to the glass. Here the summer is intense, the grapes ripen properly and the wine can naturally reach 15% ABV without the need for fortification: a quiet but decisive choice that defines the style.
Production
The Pedro Ximénez grapes are harvested and vinified dry to create a straightforward base wine. From there, Toro Albalá Fino Eléctrico Bombilla is aged biologically under a flor layer and refined using the criaderas and solera system for around 5 years, bottled with the energy of a ‘en rama’ fino: minimal intervention so it arrives with vigour, not with artifice.
Taste
Toro Albalá Fino Eléctrico Bombilla displays a straw-yellow colour with greenish highlights and a cool sheen. On the nose, it doesn’t shout fruit: fresh and toasted almond, breadcrumbs and that bakery note from the flor; lemon zest, dried herbs and a hint of spice, like white pepper, emerge against a clean backdrop. On the palate, it enters sharp and briny, with a vinous texture that makes it dangerously drinkable: it recalls oyster shells , fine iodine, and citrus peel (slightly bitter) that stretches the sip and leaves you wanting another. The acidity is like an electric current: it runs across the tongue, drying it out, polishing it and leaving a long, crisp finish, with that addictive blend of salt, bread and almond that defines the great finos… but with a Moriles Alto accent.
