The new bottling of the NV Poley Cream Solera 10 Años from February 2025, which displays an incredibly dark color, mahogany, and a nose of young sweet PX, molasses, raisins and dates. It has 17.5% alcohol and 119 grams of sugar, so it's less sweet than the bottling from a couple of years ago. It has a dense and thick palate, with lots of sweetness and little freshness. 12,000 half-liter bottles were produced. It was bottled in February 2025, and the date is printed on the back label.

Description
In Aguilar de la Frontera, when hardly anyone spoke of liquid treasures, the Toro Albalá winery made a decision as simple as it was bold: to age wines when the easy thing to do was to sell them young. They took them to age where few would look, in the subterranean calm of ancient tunnels, seeking that dark silence that tames time. That same spirit — patience, craftsmanship and a certain Andalusian stubbornness — beats today in Toro Albalá Poley Cream Solera 10 Years, a fortified wine from the D.O.P. Montilla Moriles, a region of long summers, abundant light and albariza (limestone) soils that retain moisture when the heat is at its peak. Here the king of grapes is Pedro Ximénez, and although we speak of ‘cream’, there is no artifice: there is origin, oxidative ageing and a blend that seeks a balance between depth and smoothness.
Production
Toro Albalá Poley Cream Solera 10 Yearsis made exclusively from Pedro Ximénez grapes and is created through the blending of a solera of PX and aged Oloroso, refining complexity without losing the classic character. The wine then spends 10 years ageing oxidatively through criaderas and solera, resting in casks to refine its density, toasted notes and that dark, silky texture. It is available in 50 cl bottles, with 17.5% ABV, and is best enjoyed at 10–12°C: chilled to bring out the sweetness, but not ice-cold so as not to dull the aroma.
Flavour
Toro Albalá Poley Cream Solera 10 Years is a deep mahogany colour and the first impression is of pure PX: molasses, raisins, dates, dark honey and caramel. Then the noble nuances of Oloroso emerge: toffee, toasted notes, subtle smokiness, warm spices and a hint of orange peel that sharpens the whole. On the palate it is dense and enveloping, with a pronounced yet controlled sweetness (119 g/l): a thick, dark wave that lingers slowly, leaving a trail of dried fruit, roasted coffee and spice. A serious cream, with a long finish, perfect for blue cheese, nuts or simply for listening to the sound of time.
