I tasted the October 2022 bottling of the NV Poley Fino Pasado en Rama Solera 15 Años (the bottling information is now printed on the back label). It has an amber, slightly cloudy color and an intense nose with nuttier notes, less salty/marine and a little spicier, denoting longer aging in barrel and further concentration. It has a strong dry-chalk character. It was produced with Pedro Ximénez grapes and it's unfortified. It's presented in half-liter bottles. 8,000 bottles were produced.

Description
In Aguilar de la Frontera, where the albariza limestone and white soils reflect the light like a mirror, Toro Albalá realised long ago that the silence of a cask is also a way of speaking. The idea behind Toro Albalá Poley Fino Pasado en Rama 15 Años stems from a bold decision: to let time do its work unadorned, bottling en rama, with that slightly veiled truth that asks for no permission. Here the grape is 100% Pedro Ximénez, but not for easy sweetness: for finesse and tension, for a fino with a backbone of chalk. In the Montilla Moriles PDO, the tradition of ageing under flor is a religion, but Poley allows itself the elegant heresy of waiting longer, until the veil thins and the wine gains a second voice.
Production
In Toro Albalá Poley Fino Pasado en Rama 15 Years, after the harvest, the Pedro Ximénez must is transferred to casks and the wine is aged for 15 years using the criaderas and solera system. The first stage is biological ageing: the flor protects, refines and shapes those profiles of yeast and dried fruit. Over the years, the veil begins to weaken and the onset of oxidative ageing emerges, concentrating the wine, darkening its tone and multiplying its nuances. It is bottled ‘en rama’ (with minimal intervention) in 0.5 L bottles, preserving that lively, slightly cloudy texture that is a hallmark of authenticity.
Flavour
In Toro Albalá Poley Fino Pasado en Rama 15 Years, the glass reveals an old gold colour with coppery highlights and a hint of opalescence. The nose is intense and pungent: almond, bread dough and yeast, followed immediately by hazelnut and delicate toasted notes, like the crispy edge of a brioche, but without sugar. On the palate, it is dry and enveloping, with a mineral and salty kick reminiscent of damp chalk and cellar air. The long ageing brings a noble bitterness, of walnut skin, and a subtle spice that lengthens the finish. The finish is persistent, serious and gastronomic: a fine wine that has aged without losing its edge, gaining only depth and complexity.
