The 2022 En Barberon Chardonnay comes from Lias soils and did not have sulfur added at all (the only Chardonnay from 2022 that he could handle like that), and in June 2023, only one barrel of it had finished fermentation. Description

Tissot Chardonnay En Barberon is an exceptional wine produced by renowned winemaker Stéphane Tissot in the Jura region of France. This wine is made exclusively from Chardonnay grapes, grown in a unique plot between Arbois and Chateau-Chalon. The vines were planted in 1974 and 1975 and are managed organically and biodynamically.

Winemaking

The vinification of Tissot Chardonnay En Barberon is carried out without the addition of sulphites, which enhances the purity and precision of this wine. After spontaneous fermentation in 228-litre barrels, one third of which are new, the wine ages for 24 months, developing a unique complexity and richness.

Taste

The taste of Tissot Chardonnay En Barberon is remarkably complex and elegant. It presents a range of flavours that include notes of ripe yellow citrus and butter, underlined by a persistent minerality and smoky details. On the palate, it shows impressive mineral and taste balance, with great persistence of the aromas perceived on the nose. The saline acidity on the finish adds an extra dimension, making each sip a prolonged and refined experience. This wine, with its unctuous and fatty body on the attack, is ideal to accompany white meats, spicy dishes and cheeses.
