Description
Domaine Rossignol Trapet has its roots in two deeply Burgundian areas, between Volnay and Gevrey Chambertin, but it was the brothers Nicolas and David who gave the domaine its current character by steering it towards biodynamics in the late 1990s. This was not a mere gesture, but a statement of intent: to work the vineyard so that each plot could express itself with less artifice and more authenticity. In the Rossignol-Trapet Latricières Chambertin Grand Cru, this philosophy finds its perfect expression. This Burgundy Grand Cru, fresher and ripening later than other neighbouring Gevrey plots, expresses itself through poor, stony and calcareous soils, where Pinot Noir—the wine’s sole grape variety—does not unfold with exuberant breadth, but rather with tension, nuance and restrained depth. Here, everything seems geared towards finesse, verticality and that noble reserve that does not seek to impress immediately.
Winemaking
In the cellar, Rossignol-Trapet Latricières Chambertin Grand Cru follows the same philosophy of precision and restraint. The grapes are harvested by hand and rigorously selected, with the aim of preserving the purity of the fruit from the moment the grapes arrive. Fermentation is carried out with gentle extraction, avoiding any excessive intervention that might harden the wine’s profile. In recent years, a significant proportion of whole bunches has been used, imparting vigour, spicy notes and a very refined structural freshness. The wine then spends 18 months in French oak barrels (50 per cent new) for measured ageing, designed not to impart a pronounced oak character, but to refine the texture and sustain the structure of the Grand Cru until bottling.
Taste
In the glass, Rossignol Trapet Latricières Chambertin Grand Cru does not impose itself, but unfolds. The nose opens with dried flowers, pale pink, raspberry, red cherry and a hint of blood orange, all interwoven with a sensation of cool stone and delicate spice. On the palate, it is medium-bodied, straightforward and precise, with silky tannins and firm acidity. It does not seek volume, but rather structure. Crisp red fruit, a touch of white pepper, a very subtle hint of spice and a stony savouriness combine to create a long, serious and deeply elegant finish.
