Description
Located in the heart of the Salnés Valley, Pazo Señorans is more than a winery; it is history, tradition and bottled passion. It all began in 1979, when Marisol Bueno and Javier Mareque decided to turn an old 16th century manor house into the home of one of the most emblematic Albariños of Rías Baixas. Since then, its name has become synonymous with quality and authenticity.
Pazo Señorans Albariño is made from 100% Albariño, a grape that finds its purest expression in these lands. The vineyards, between 10 and 50 years old, grow in granitic and sandy soils, which provides that recognisable minerality in every sip. If you have ever felt the sea in a glass of wine, it was probably an Albariño like this one. The influence of the Atlantic Ocean and the meticulous work in the vineyard make Pazo Señorans a wine with a vibrant and fresh personality.
Winemaking
Pazo Señorans Albariño is harvested by hand, selecting only the best grapes, which are carefully transported in small boxes. After a gentle pressing, fermentation takes place in stainless steel tanks, maintaining a controlled temperature to bring out the fruity and floral aromas. The interesting thing here is that the wine rests on its lees for at least five months, with frequent bâtonnage, a technique that gives it greater structure and creaminess without losing an ounce of freshness.
Taste
If wine had a sound, Pazo Señorans Albariño would sound like a fresh and vibrant melody. To the eye, its straw yellow with greenish hues is reminiscent of sunlight filtering through the Galician vineyards. On the nose, it explodes with intense aromas of white fruit, fresh flowers and a subtle hint of aromatic herbs, as if you were strolling through the countryside after a light drizzle.
But the best comes on the palate. The entry is smooth and enveloping, with an acidity that awakens the senses and a lingering finish that leaves hints of citrus and salinity. It is a wine that invites you to take another sip, as if the glass had a magnet.
Pazo Señorans Albariño is perfect to accompany fresh seafood, oysters or even a soft cheese board. But, frankly, it is also a delight to enjoy it without haste, with good company and a pleasant chat.
Pazo Señorans Albariño is not just a wine, it is an experience. Each bottle tells the story of a land, a climate and a tradition that has been perfected over the years. And if you haven't tried it yet, you are just in time to discover why it is one of the great benchmarks of Rías Baixas.
