The 1964 Palo Cortado Marqués de Poley Selección was aged in a solera system of which 50 botas remain. It's a very old fortified wine produced with Pedro Ximénez grapes, aged in well-seasoned American oak barrels. It is full-bodied, which hints at an Oloroso origin, and has the aromas of a very old wine with rusty nail, saltpeter, low tide, phosphor and matchstick notes with a volatile twist. Wines like this are not meant to be consumed by the general public (the price already prevents that) as their style is not easy to appreciate and might seem aggressive to some. There are 24,000 liters of this wine, and the plan is to bottle it in 375-milliliter bottles.

Born in the Montilla Moriles PDO, where the sun beats down and the chalky albariza soil holds onto the scarce rainfall like a treasure, Toro Albalá Marqués de Poley Palo Cortado Convento Selección is, above all, a human choice. At Toro Albalá, Antonio Sánchez detected a distinct ‘heartbeat’ in some casks intended for fino, a profile that didn’t fit with the rest… and instead of correcting it, he protected it. That gesture—almost obstinate—turned a deviation into a gem: letting the wine find its own path, without taming it. The variety is Pedro Ximénez, here taken to the edge of dryness and seriousness, demonstrating why this grape, so well adapted to the dryness and heat of Córdoba, can also be a knife, not just sweet velvet.

Production

The grapes are fermented to produce a dry base wine; it is then fortified to 22% ABV and begins its slow ageing in wood. Origin is crucial: it is born from fino casks selected for their unique character and, after a very long ageing period, evolves towards a more oxidative profile, gaining aromatic complexity over the years in old casks (weathered wood, more memory than aroma). It is bottled as a collectible fortified wine: Toro Albalá Marqués de Poley Palo Cortado Convento Selección, to be served at 12–13°C, when the freshness sustains the tension of time: a cult Palo Cortado, rare, precise.

Flavour

Toro Albalá Marqués de Poley Palo Cortado Convento Selección appears in the glass as an amber colour with coppery and greenish glints, like polished antique bronze. The nose is intensely noble: tobacco, old wood, spices, a hint of minerality; then come dried fruits, citrus peel and a note of fine pastry that does not sweeten, but merely rounds out the flavour. The attack is dry and full-bodied, almost tactile, with that unmistakable sensation of an aged cask: breadth without sugar, depth without heaviness. On the palate it becomes velvety, intense and long, with a salty, slightly volatile echo that gives it a lively edge, like a match being struck in the distance. It finishes elegantly, with a serious character, and is dangerously ‘drinkable’ for a wine that is, in reality, meant to be contemplated in its purest form.
