A style that has almost disappeared is very evident in the NV Single Cask Tintilla de Rota 1/1, where the 1/1 means it was bottled from only one existing cask! So there is only one cask of this super unusual sweet wine produced with red Tintilla de Rota grapes, which resulted in an ebony color with a yellow-green edge that indicates old age. It's dense as motor oil with a combination of sweet and bitter flavors, some burned notes, dark sugar, molasses, syrup, licorice and not a lot sweetness, as that's compensated by the bitter sensation. This is not a wine for everybody, with some 251 grams of residual sugar and a completely unusual profile close to what was before known as 'vino de color,' a sort of natural coloring obtained by reducing must, which was then aged for a very long time. Only 240 half bottles were filled from this single cask that had been sealed since 2001, suffering severe evaporation which resulted in great concentration.

Description
An Atlantic breeze whispered the idea in the minds of the Lustau winemakers: to rescue the Tintilla de Rota, an almost extinct variety that survived in small coastal corners of Cádiz. It is a dark-skinned grape, genetically identical to Graciano, but deeply marked by the warm, humid climate of the Cadiz coast. This wine was born as a tribute to the past - to the old dessert wines made in the region - and as an act of faith in the power of time and stillness. In 2001, a single cask was filled and sealed with wax, without movement, spraying or blending. It remained motionless for more than two decades in Lustau's cellars, under the sway of the seasons and the slow natural evaporation. Hence, Lustau Tintilla De Rota Single Cask: a bottled testimony of patience and uniqueness.
Winemaking
The winemaking process of Lustau Tintilla de Rota Single Cask begins with a traditional soleo, where the grapes are sun-dried to concentrate sugars. Then, a partial fermentation begins, which is interrupted by the addition of wine alcohol, preserving the natural sweetness of the fruit. This fortified must is put into a single oak cask, which is never touched, cooled or racked. Sealed since 2001, the wine remained static for more than 20 years. Evaporation - the "angel's shrinkage" - reduced its volume to less than a third, creating an almost alchemical density and concentration. From there, just 204 50 cl bottles have been released into the world.
Taste
To the eye, Lustau Tintilla de Rota Single Cask is dense, almost opaque, with greenish reflections typical of long ageing. The nose is intense and mysterious: balsam, old pharmacy, iodine, black liquorice, clove, dried figs, molasses and a touch of roasted coffee. On the palate, the texture is viscous, enveloping, sweet without being cloying. Notes of burnt sugar, dark chocolate, sultanas and a saline background reminiscent of the nearby sea. The still lively acidity contrasts with the sweetness and adds freshness. Long, spicy finish, with echoes of leather, cedar, bitter almonds and black cherry liqueur.
Lustau Tintilla De Rota Single Cask is a complex, radical, out-of-style wine. It is an elixir for connoisseurs, for those who seek rarities with soul. An extreme creation that embraces sweetness and oxidation without losing verticality. Ideal for contemplation, to close a meal with silence, or to accompany blue cheeses, bitter chocolate or simply reflection.
