Rounding up the single cask series is the NV Single Cask Pedro Ximénez, selected from one of six casks, with sweet and roasted aromas and flavors and acidity that partly compensates for the whopping 442 grams of residual sugar. It's around 20 years of age and will eventually feed their VORS. Even if it might sound like sacrilege, pour it over vanilla ice cream. Yum! 480 half bottles were filled in march 2017.

Description
In the silence of Lustau's century-old cellars, where the air smells of old wood, marine humidity and oxidative wine, a rarity was born by intuition: Lustau Pedro Ximénez Single Cask. It was not part of a plan or a big production. It was the result of a courageous decision: to isolate a single, different, exceptional butt and let it evolve on its own. That almost poetic gesture by the foreman, who recognised its unique character, gave rise to this unrepeatable wine.
Made from 100% Pedro Ximénez grapes, harvested by hand and then sunbathed in racks under the relentless Andalusian sun, until the sugar is concentrated in the form of dense, almost solid honey. Although the grapes come from the limestone vineyards of Montilla-Moriles, the wine is aged in Jerez de la Frontera, in one of the coolest and most humid areas of the city, where the passage of time and the Atlantic breeze mould its character.
Winemaking
After a gentle pressing, the must of Lustau Pedro Ximénez Single Cask barely ferments, as the high concentration of natural sugars slows down the process spontaneously. Fermentation is stopped with wine alcohol, thus preserving its primary sweetness. The wine then enters a sherry cask made of American oak, where it will remain for years. No racking, no criaderas, no solera. Only time, wood and oxygen intervene.
For more than a decade, this single cask allowed Lustau Pedro Ximénez Single Cask to develop an incomparable sensory richness: concentration, density, depth. A static oxidative ageing, which gives rise to a singular and naked profile, without make-up or blending.
Taste
Visually, Lustau Pedro Ximénez Single Cask is dense ebony, with mahogany highlights and slow, opaque tears. The nose is overwhelming: black figs, dates, ground coffee, clove, liquorice, bitter chocolate and old varnish. All of this is supported by a saline patina that lightens the intensity.
On the palate, Lustau Pedro Ximénez Single Cask shows a creamy, silky, enveloping attack. A deep, dark sweetness, balanced by an unexpected acidity that tightens the whole. Hints of nutmeg, sweet tobacco, prunes and toffee appear in successive layers. The finish is very long, with echoes of noble woods and candied fruit.
A contemplative, intense wine, perfect to accompany blue cheeses, bitter chocolate desserts or simply silence. Each sip of Lustau Pedro Ximénez Single Cask is a journey to the very essence of time, tradition and patience.
