Description

Julien Brocard, heir to an emblematic Chablis winemaking saga, decided in 2012 to set out on his own path with "Les 7 Lieux", an intimate, radically biodynamic project that seeks to express the pure soul of each terroir. In Vaudevey - a vertiginous, east-facing hillside nestled behind the Côte de Léchet - he found a natural amphitheatre where Chardonnay is grown on the edge, amidst morning mists, Kimmeridgian soils and an almost aggressive minerality. On this plot of just four hectares, the vines breathe the rigour of the continental climate and the freshness of dawn, giving rise to a wine of vibrant energy and elegant austerity.

Julien Brocard is undeterred. In adopting biodynamic practices, Julien faced scepticism from some neighbours. He persisted, convinced that a living soil speaks louder than any technical intervention. The result is an honest, luminous, and lively interpretation of Burgundy's northernmost Chardonnay.

Winemaking

Julien Brocard Chablis 1er Cru Les Vaudevey is harvested by hand, with rigorous selection in the vineyard. The grapes are carefully transported and gently pressed. Fermentation, with indigenous yeasts, is carried out in oak foudres - large, used barrels - which allow for slow micro-oxygenation, without overly influencing the aromatic profile. The wine ages for 12 to 13 months on its fine lees, without bâtonnage, seeking to preserve tension and purity. There is no make-up in the vinification: only the pulse of the terroir, amplified with patience and respect.

Taste

On the nose, Julien Brocard Chablis 1er Cru Les Vaudevey opens with a restrained symphony: aniseed, raw almond, a green trace of pepper and fresh grass, and a saline background evoking wet stone and sea breeze. The oak is present, but as a toasty whisper that envelops, without obscuring.

On the palate, Julien Brocard Chablis 1er Cru Les Vaudevey enters with determination. The texture is taut, sharp, like a string vibrating on a mast. There are notes of candied lemon zest, mint, aniseed and an enveloping salinity that cleanses the palate. The acidity is lively but well integrated, and the long, mineral finish leaves a fresh, almost minty aftertaste that invites the next sip.

No concessions to exuberance: this is a Chablis with an austere, upright, deep profile. Ideal for those looking for wines that speak from the ground up, with nerve and authenticity. An unadorned expression of the northernmost Burgundian Chardonnay, sharp as a scalpel, pure as a stone's edge.
