Based on the 2019 vintage, the NV Extra-Brut Cuvée No. 747 reveals a lively, delicate bouquet of white pepper, tangerine, lemon oil, herbs and red berries mingled with lovely menthol notes. Medium to full-bodied, tense and sappy, it's layered with a vinous core of fruit and a delicately saline finish. This is not the most opulent iteration from this house but rather an edition that closely reflects the character of the vintage, marked by its tension and phenolic complexity.

Description
Jacquesson Cuvée 747 is not "designed": it is listened to. This extra brut Champagne was born from an almost obstinate idea of the maison: to bottle each year a faithful portrait of the climate and its plots, without make-up, with the same respect with which one treads on an old vineyard at dawn. In 2019, the winter was mild and dry, but the spring hit with three frosts that punished the Chardonnay in particular; far from correcting the course, the house accepted the consequences and let the vintage speak: a natural predominance of Pinots in the blend.
The base is 75% from Aÿ, Dizy, Hautvillers and Champillon, and the remaining 25% from Avize and Oiry: the chalky tension of the Côte des Blancs and the fleshier pulse of the crus from the Marne Valley. A terroir Champagne that lives from the diversity of soils, exposures and microclimates, and makes precision its signature.
Winemaking
Jacquesson Cuvée 747 was harvested from 12 to 22 September, with moderate yields and high quality fruit. The viticulture relies on respectful soil management to express the diversity of the plots. Vinification and ageing are carried out in large wooden vats, on lees, and with a radically clean philosophy: no filtration or clarification. The refinement culminates with a minimum dosage (1.5 g/l), authentic extra brut, and a very measured production.
Taste
Jacquesson Cuvée 747, when served, does not seek easy plaudits: first it suggests, then it reveals. The nose opens on layers of green apple, pear and a hint of quince, with a serious line of brioche, toast and hazelnut from the lees. On the palate the bubbles are fine and silky, but the wine has backbone: it feels structured, long and complex, with a sharp freshness that sharpens the swallow and leaves a saline, chalky trail. This is not a Champagne for greetings: it is a gastronomic Champagne, dry, with a straight line... and yet sensual in its persistence.
