Description
The Foillard Fleurie wine is a natural red wine made with Gamay grapes from three different vineyards, which have been cultivated on hillsides composed of granitic sandy soils.
It is an example that denotes in its flavour the terroir where it comes from, and where the influence of fruits and floral touches, combined with accentuated tannins, classify it as a wine with unique characteristics.
It is a red wine that follows the philosophy of this winery, avoiding the addition of chemical elements that alter the natural expression of the grape.
Winemaking
The production of Foillard Fleurie wine begins with the harvesting phase, which is carried out manually, as this respects the integrity of the fruit. At this stage, the best bunches are selected directly in the field.
Once the fruit arrives at the winery, it is stored whole and without destemming, and then fermented using traditional techniques, in a carbonic maceration process.
The fruit ferments at a low temperature for a period of 3 to 4 weeks, using indigenous yeasts. Finally, it is aged for 6 to 9 months in French oak barrels. No sulphur is added to this type of wine during the vinification phase.
Taste
Foillard Fleurie wine is defined as a fruity red wine, because in its taste you can taste the different tonalities of red and black fruits. It also integrates some floral touches that combine with an earthy and smoky flavour. The presence of velvety tannins is one of its most defining characteristics.
A wine with vibrant acidity
The Gamay grape has a particular flavour, which also when treated under artisanal techniques, manages to express itself in the wine with a vibrant acidity. This red wine is ideal with pasta and red meats.
