Description

Fanny Sabre Monthélie Les Sous Roches is a red wine from the Burgundy region, made exclusively from the Pinot Noir grape variety. This wine comes from a recently acquired plot in the emerging appellation of Monthélie, close to the famous Meursault.

Winemaking

Fanny Sabre, a winemaker renowned for her natural and organic approach, produces this wine in small quantities, maintaining an artisanal and environmentally friendly winemaking process. The grapes are harvested by hand and fermented using indigenous yeasts, with maceration in stainless steel tanks for 4 to 5 days, followed by natural fermentation in oak barrels for 15 days. Ageing takes place in used oak barrels for 15 to 18 months, giving the wine a distinctive complexity and elegance.

Taste

Fanny Sabre Monthélie Les Sous Roches is noted for its smooth and delicate flavour. It has a complex aromatic profile with notes of red and dark fruits such as cherry, raspberry and blackberry, accompanied by soft green herbs and light earthy hints of mushroom. On the palate, it is juicy and elegant, with well-balanced acidity and ripe tannins that give it a silky texture and a long finish. This wine is ideal both to enjoy in its youth and to cellar, where it will further develop its aromatic complexity and flavour.
