Description
Maestro Sierra Fino is a dry wine made exclusively from Palomino grapes (100%) in the Jerez-Xérès-Sherry region. This wine is produced through a process of biological ageing under a velo de flor, which is a natural layer of yeasts that develops on the surface of the wine, protecting it from contact with oxygen and preventing oxidation. This process gives the Fino a fresh and distinctive character. The ageing of this wine lasts at least four years in 500-litre American oak casks, using the traditional system of criaderas and soleras.
The base wine is fortified until it reaches 15% alcoholic volume, which allows the flor to grow. Over the years of ageing, the Fino develops highly appreciated characteristics on the nose and palate, such as its pale colour and its dry, sharp taste.
Taste
Maestro Sierra Fino is distinguished by its dry and light taste in the mouth, with a sharp and delicate sensation. It has aromatic notes of yeast, lemon peel, fresh grass and almond. On the palate it is fresh and very flavoursome, with a lingering saline finish. This profile makes it an excellent choice to accompany tapas, especially Iberian ham.
This Fino stands out for its balance and versatility, being an excellent choice both for aperitifs and to accompany light meals.
