The sweet NV Pedro Ximénez Anticuario is a rarity, because it's sold at 'natural' strength of 'only' 10.5% alcohol, as it was never fortified and started with 10% alcohol. It's sweet and velvety textured, with textbook notes of dark chocolate, coffee, raisins and carob beans. It feels like there’s no alcohol here; it has unusual freshness and doesn’t even feel too sweet. A unique PX.

Maestro Sierra Pedro Ximénez Anticuario is an oenological jewel, remarkable not only for its exceptional natural sweetness, but also for its meticulously handcrafted winemaking process. This wine is a single varietal made exclusively from Pedro Ximénez grapes, a grape known for its high concentration of sugars and its ability to produce naturally sweet wines. The most outstanding feature of this wine is that it has not been fortified, i.e. no alcohol has been added during the vinification process, which is unusual in the Jerez region. As a result, the wine has a completely natural alcoholic volume of 10.5%, derived solely from the fermentation of the grape's own sugars.

Winemaking

Vinification begins with the harvesting of the Pedro Ximénez grapes, which are sun-dried after the grape harvest, a process in which they are dried in the sun to further concentrate the sugars. After this step, the grapes are pressed to extract their juice, which is then partially fermented due to the high sugar content, stopping the fermentation process before all the sugars are converted into alcohol. The resulting wine undergoes an oxidative ageing process for 50 years in American oak casks, using the traditional system of soleras and criaderas, a method that consists of blending wines from different vintages to ensure the consistency and quality of the final product.

Taste

In sensory terms, El Maestro Sierra Pedro Ximénez Anticuario is complex and surprising. On the nose, it offers an intense combination of aromas of sultanas, dark chocolate, roasted coffee, and dried figs. On the palate, the wine is dense and silky, with a velvety texture that envelops the palate. The flavours align with the olfactory notes, highlighting caramel, sultanas, tobacco and a slight vanilla note from its prolonged interaction with American oak. Despite its sweetness, the wine is surprisingly fresh, maintaining a harmonious balance that prevents it from being cloying, which makes it a unique experience for the consumer.
Moreover, this Pedro Ximénez has an extraordinary ageing capacity. Thanks to its high sugar content and complex structure, it can be kept in bottle for decades, developing even more complexity over time. It is a wine that is recommended to pair with dark chocolate desserts or cured cheeses, although it can also be enjoyed on its own, as a meditation wine.
