The winery somehow specializes in Oloroso, so there are a number of bottlings of that type. The NV Oloroso 1/14 is a VORS with an average age of 50 years. It's a textbook old Oloroso, very expressive, aromatic and open with a nice mixture of nuts, varnish and noble woods. It comes from a selection from 14 American oak barrels where the wine aged in an oxidative way. It has outstanding persistence and length.

Description
Maestro Sierra Oloroso 1/14 is one of the most emblematic wines of the El Maestro Sierra winery, which has maintained a winemaking tradition of more than 200 years in the region of Jerez, Spain. This wine belongs to the VORS (Very Old Rare Sherry) category, which indicates that its average age exceeds 30 years, although in this particular case it is estimated to be 50 years old. Its exceptional quality comes from the oxidative ageing process, in which the wine ages in contact with oxygen, which gives it its unique character.
Winemaking
Made exclusively from the Palomino grape variety, typical of the region, Oloroso 1/14 is a generous wine, i.e. it has a high alcohol content (22% vol.), which is achieved by fortification during the winemaking process. The wine is aged in American oak casks, where it remains for decades, acquiring complexity and maturity over time. The winery uses the traditional system of criaderas and soleras, where the younger wine is blended with older wines to ensure consistent quality.
Taste
Maestro Sierra Oloroso 1/14 is a structured wine, with a highly developed aromatic character thanks to its long ageing. On the nose, it presents intense aromas of dried fruits such as walnuts and almonds, together with notes of noble woods, varnish and hints of spices. On the palate, it is dry but extremely tasty, with balanced acidity and a long, lingering finish. Its velvety texture and powerful structure make it ideal to accompany game dishes, red meats or cured cheeses, although it can also be enjoyed on its own as a meditation wine.
This wine represents the essence of old Olorosos, with an elegance and depth that reflect its history and the know-how of the winery.
