Fermented with indigenous yeasts in barrels. Malolactic fermentation and ageing on lees in French oak barrels.
Description
Château Fuissé Pouilly Fuissé 1er Cru Les Brûlés is, above all, a statement of origin. In the heart of the Mâconnais, in southern Burgundy, the Vincent family has spent generations refining a style that does not seek easy acclaim: it seeks authenticity. The idea of bottling Les Brûlés as a single vineyard wine stemmed from a bold decision: to separate a climat and vinify it separately when many preferred blending, convinced that this slope had a character all of its own. There is no blend of varieties here: it is 100% Chardonnay, but interpreted through soils that dictate character. The vineyard is tiny (0.7 ha), on a south-facing slope, over marl and blue clay that combine breadth and tension. A micro-terroir where the sun ripens the fruit and the subsoil cools the wine’s backbone, yielding a Burgundy white with muscle and precision.
Production
At Château Fuissé Pouilly Fuissé 1er Cru Les Brûlés, the harvest is done by hand, as the slope is unforgiving and selection begins at the vine. In the cellar, the bunches are whole-cluster pressed using gentle cycles to extract purity. The must is decanted in stainless steel and the clear juice is racked into barrels within the château. Fermentation relies on indigenous yeasts, and the ageing is decidedly Burgundian: in new barrels, on lees, with bâtonnage to gain texture and depth. It usually undergoes full malolactic fermentation; before bottling, light filtration maintains the wine’s clarity without stripping it of its character.
Taste
In Château Fuissé Pouilly Fuissé 1er Cru Les Brûlés, the nose does not shout: it hints. Ripe pear, golden apple and a touch of yellow fruit emerge, against a backdrop of toasted bread, hazelnut and a very delicate vanilla. With a little air, a smoky note emerges, like a stone warmed by the sun. On the palate, it starts fresh and aromatic, and immediately becomes round and dense: a creamy lees texture, a broad mid-palate, yet without heaviness. The clean acidity clears the way and stretches out the long finish, with hints of brioche, subtle honey and a mineral edge that leaves the mouth salivating. A Pouilly Fuissé 1er Cru that is both serious and hedonistic: controlled power, hillside elegance, and the persistence of a great food wine.
