At Château Fuissé Pouilly Fuissé, in the very heart of the Mâconnais and the Pouilly Fuissé AOC, greatness is not sought with fanfare: it is cultivated plot by plot. Its vineyards — divided into numerous climats — reflect an almost obsessive philosophy: listening to each hillside and bottling its character. Château Fuissé Pouilly Fuissé Les Combettes stems precisely from this idea: not to ‘make a generic Burgundywhite ’, but to let a small valley with a distinct identity speak for itself. The bold decision here is not to add, but to subtract: to forgo aromatic embellishment in pursuit of a chalky, taut and salty purity. And all with a single variety, Chardonnay, which on these stony soils becomes more scalpel than velvet: a white wine of precision, with a gastronomic profile.
Production
At Château Fuissé Pouilly Fuissé Les Combettes, the harvest is carried out by hand, with careful transport to the winery and whole-bunch pressing in a pneumatic press, using progressive pressure to prioritise finesse and avoid bitterness. The must is clarified in stainless steel and the clear juice goes directly into barrels. It ferments with indigenous yeasts and is aged on lees, with lees work to gain texture without losing its edge. The wood is used to allow the wine to breathe, not to impart aroma: barrels aged 3 to 5 years are used to minimise the oak’s influence. It typically undergoes full malolactic fermentation and, following precise stabilisation, is bottled with light filtration that preserves its energy and clarity.
Flavour
At Château Fuissé Pouilly Fuissé Les Combettes, the terroir reigns supreme: a cool aspect and stony limestone soils impart delicacy and a vibrant salinity. On the nose, the wine opens with a clean brightness: white flowers, cool minerality, ripe apple and a hint of stone fruit, without any exuberance. On the palate, it is full and fresh, with that Burgundian blend of roundness and tension; the lees add ‘body’ without making it heavy. Hints of lemon and pear emerge, along with a subtle butteriness —more texture than sweetness—and a very discreet spicy note. The finish is dry, long and stony: a serious, elegant Pouilly Fuissé, the sort that leaves the tongue with a taste of wet stone and the dangerous temptation to pour another glass.
