Disgorged in June 2021, the latest release of Paillard's NV Extra-Brut Première Cuvée is showing very well out of the gates, and it's already expressive, bursting with aromas of ripe orchard fruit, freshly baked bread, brioche and citrus oil. Medium to full-bodied, fleshy and precise, with a pinpoint mousse, bright acids and chalky grip on the finish, it's approachable now but also built to evolve with grace.

Description
Bruno Paillard Extra Brut Première Cuvée is a very personal interpretation of the entire Champagne region. This cuvée is the fruit of more than 30 Crus from the noblest terroirs of the Champagne region, the composition of which is kept secret.
Winemaking
The first pressing of Pinot Meunier (22%), Chardonnay (33%) and Pinot Noir (45%) is selected. Part of this (20%) undergoes its first fermentation in oak barrels. In addition, the reserve wines are included, 25 vintages blended since 1985 in a proportion that can reach up to 50%. The ageing is long and meticulous, with 3 years on lees followed by at least 5 months after disgorging. The dosage, Extra-Brut (less than 6g/L), makes this wine an authentic and pure champagne.
Taste
The appearance of this champagne reveals a golden straw colour indicating a high presence of Chardonnay and the exclusive use of the first pressings. The fine bubbles are the result of a strict selection of the best grapes, a perfectly controlled temperature in the cellar and very long ageing. On the nose, the primary aromas reveal the citrus fruits of Chardonnay: lime and grapefruit. This is followed by the red fruit aromas of Pinot Noir: redcurrant, raspberry and cherry. When opened in the glass, the wine shows notes of dried fruits, sometimes exotic, from the Pinot Meunier. On the palate, the attack is lively thanks to the low dosage that respects the wine's authenticity. The aromas are confirmed with the first flavours of citrus fruits, almonds, toast... but also redcurrant jelly and black fruits such as cherry, fig or blackberry. As it evolves, its aeration and warming up slightly reveals flavours of plum and pear. The palate is ample without being heavy, quite long, leaving a very clear finish.
