The Bruno Paillard NV Cuvée 72, aged 36 months on lees with an additional 36 months post-disgorgement, was disgorged in November 2018 with six grams per liter. It’s an excellent Champagne, offering aromas of pastry, lemon, blood orange, spices, saffron and touches of cedar. Medium to full-bodied, seamless, rich and slightly creamy, it’s vinous and lively with a salty and iodized finish. It can be drunk any time over the coming five years.

Bruno Paillard Cuvée 72 Extra Brut stands out for its particular elaboration and subtle complexity.
Winemaking
This cuvée is composed of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. It spent 36 months on the lees and a further 36 months after disgorgement, for a total of 72 months of maturation before being put on the market. Hence the name "Cuvée 72". This cuvée is a variation in the complexity of time and development of Bruno Paillard's Première Cuvée. It is composed of more than 30 wines whose composition is kept secret. Cuvée 72 includes a system of reserve wines dating back to 1985 along with the last vintage. It is a first pressing selection of meunier, chardonnay and pinot noir, a proportion of which (20%) has had its first fermentation in oak barrels.
Taste
It has a bright golden hue flecked with yellow with fine bubbles. On the nose, the primary notes are slightly dominated by citrus, gradually opening up to white flowers such as orange blossom, hawthorn and light acacia. Over time, the aficionado will also discover notes of spice, saffron or cedar wood. On the palate, the attack is both lively and enveloping. The aroma is reflected and joined by flavours of redcurrant jelly and black fruits. The creamy texture shows slightly honeyed notes and dried fruits. The finish is very pure, long and generous.
Bruno Paillard Cuvée 72 Extra Brut is a clear example of the warm, settling effect of post-degüelle ageing. It is perfect as an aperitif and pairs well with elaborated fish main courses, molluscs and small crustaceans or with light appetizers.
