Description
Bruno Paillard Blanc de Blancs Millésime is a gem from the Grands Crus Oger and Le Mesnil-sur-Oger. This vintage is characterised by a limpid, crystalline freshness that, over time, reveals the fullness of what turned out to be a generous summer. This champagne is made exclusively from the first, purest pressing of Grands Crus Chardonnay from the heart of the Côte des Blancs: Le Mesnil-sur-Oger and Oger. Surprisingly, 25% of this champagne was vinified in old oak barrels.
Winemaking
The ageing process is meticulous and detailed. It benefits from seven years of ageing on lees and an additional 12 to 18 months of resting after disgorgement. The dosage is Extra Brut, with 4.5g/l. The composition is 100% Chardonnay. To understand the 2013 vintage, it is essential to know its origins. The autumn was relatively wet, resulting in abundant vegetation and a replenished water reserve. The winter was short and cold, and the spring remained cool. However, the summer began beautifully, and although it was hot and dry, the vines ripened relatively slowly.
Taste
The appearance of the champagne is a brilliant pale golden hue, with a fine, chiselled effervescence. On the nose, it is fresh and biting, but also generous. It has primary notes of chilled ash and white flowers, which slowly open up to reveal white peach and lemon verbena, with fresh almond. On the palate, it is lively and precise, with a crystalline and limpid attack, diffusing a seductive salinity. The wine settles in the mouth with a texture that is both ample and melting. There is almost a minty freshness on the palate, accompanied, as the wine opens up, by a slightly meaty fruitiness that evolves into toasted hazelnuts.
