Description
If there is a wine that breaks the mould, it is Ghaur by Makatzak Wild Wines. Don't expect the usual. This white comes with character, freshness and an almost indomitable energy. Behind it are Aitor Irazu and Jon Estebanez, two viticulture enthusiasts who have rescued forgotten vineyards in Aia, Gipuzkoa, to bring them back to life and, at the same time, surprise us with wines that taste of the landscape, the sea and the Atlantic breeze.
Makatzak Ghaur is a blend of 60% Hondarrabi Zuri and 40% Hondarrabi Zuri Zerratia (Petit Courbu). Native grapes, with deep roots in Basque history. The estate where they come from is in Mendarte (Zerain), at an altitude of 400 metres above sea level, surrounded by wild nature. The soils, with a sandy-loam texture and sandstone mineral layers, provide structure and an unmistakable mineral character.
Winemaking
There is no artifice or make-up in Makatzak Ghaur. After destemming, the grapes are gently pressed and undergo static cold settling for 24 hours. Fermentation is 100% spontaneous, with indigenous yeasts that allow the grapes to express themselves without filters. The wine then rests for 10 months on fine lees, without batonnage. The result? A white wine with volume, texture and a depth that is captivating.
Taste
Makatzak Ghaur doesn't pull any punches. From the first sip, a vibrant electricity runs through the palate. There is a light effervescence, a sparkling freshness that wakes you up instantly. Then there are notes of juicy white fruit, such as pear and apple, intertwined with hints of citrus and a saline mineral background that transports you straight to the Bay of Biscay. It is a wine that makes you salivate, that asks for company: fresh seafood, white fish, or simply an afternoon of laughter with friends.
