Description
Cavarodes La Bulette emerges as a vibrant sparkler in the Jura, conceived by Étienne Thiébaud after inheriting the family vineyards in 2007. Driven by a philosophy of minimal intervention, Étienne embraced biodynamic practices and manual viticulture influenced by the lunar calendar. The idea of making this natural sparkling wine came from a desire to capture the immediate essence of the Chardonnay grape, sensitive to the limestone and marl terroir of Arbois, without artifice or oenological tinkering. An anecdote tells that in order to preserve this aromatic fragility, he decided to bottle part of the vintage just as the bubbles were beginning to form in the tank, a courageous decision that embodies the spontaneity of expression.
Winemaking
Cavarodes La Bulette is made using the ancestral method, also known as pétillant naturel, a single fermentation technique that requires precise intuition rather than technical control. The wine begins fermentation spontaneously in tank with indigenous yeasts, without the addition of sulphites or oenological corrections. Before fermentation is complete, it is bottled, allowing the transformation of sugar into alcohol and gas to continue in the bottle, where it develops its bubbles naturally.
But unlike many fast-drinking pét-nats, Etienne Thiébaud takes this wine to a deeper level of expression: La Bulette spends 24 months on the lees, which adds texture, complexity and a delicate creaminess to the bubbles. At the end of this long rest, the wine is disgorged by hand, without the addition of expedition liqueur, thus maintaining its raw, dry and unspoiled character. Nothing is filtered, nothing is corrected; it is bottled as it is: with everything it has, with no embellishments.
Taste
On the nose, Cavarodes La Bulette displays aromas of ripe yellow fruits: peach, apricot and a citrus note evoking lime and citrus, with subtle hints of yeast and light bakery that add complexity without opacity. The palate is surprisingly crisp and lively in its freshness: citrusy and vibrant, supporting a clear mineral base, with soft bubbles that caress with intensity but without stiffness. There is a delicate evocation of ripe apple or quince, though always tamed by its acidic energy. The sensation is pure, light and joyful; one feels the chalky earth and the breath of the Jura in every sip.
