Description
From the very first moment, one senses that this Chardonnay is not just another bottle: it is the embodiment of a passionate and audacious youth. In 2007, Etienne Thiébaud, barely 22 years old, decided to take over the reins of the modest family legacy in Cramans. His bond with the land was not improvised: it was born with each manual harvest, each slab of chalky and clay soil, and each respectful gesture of biodynamics and certified organic viticulture that he exercises in old vineyards nestled in the AOC Arbois, between pure marl and limestone.
Winemaking
The grapes, 100% Chardonnay, destined for the Cavarodes Arbois Chardonnay de Messagelin, mature on limestone, clay and marl soils in old vines, are harvested by hand at their optimum ripeness. In the cellar, Etienne opts for natural vinification: spontaneous fermentation with indigenous yeasts, without corrections, in used French oak barrels, where it remains for 12 months in contact with the wood, before bottling without fining or filtering, and without adding sulphites. A curious anecdote: when experimenting with a small maceration, a fraction of the Chardonnay was worked with five days of contact with the skins, a creative licence that added volume and freshness to the blend without betraying the delicate profile of the vineyard.
Taste
In the glass, Cavarodes Arbois Chardonnay de Messagelin displays restrained elegance: on the nose, luminous citrus fruits - like squeezed lemon and ripe yellow fruit - float over a dry, almost saline mineral background, reminiscent of the granite and limestone of the more invisible Jura. On the palate, the entry is broad and rounded, with a juicy, fluid sensation reminiscent of fresh fruit, perhaps white peach or ripe pear, but always driven by a tension that avoids opulence. The finish, complex and memorable, leaves a refined bitter trace, wrapped in a curious salinity that distracts from the fruit to celebrate the terroir.
This natural Jura wine is a crystalline ode to the most authentic and ethereal Jura: fresh as the breeze on limestone soils, taut as a razor's edge, yet gentle - wines for discerning palates, looking for personality, territory and a sensory narrative that resonates beyond the fruit.
