The 2023 Côtes du Jura Pinot Noir Les Lumachelles comes from the Lumachelles lieu-dit in the commune of Mouchard north of Arbois and was planted with 15% other red varieties. This fermented in stainless steel and matured in foudre. It has fragrant notes of wild herbs, flowers and berries. It is surprisingly good. I think this is the first time I tasted a Pinot Noir from Cavarodes, and it's more classical and a little Burgundian, one of the finest reds here.

From the depths of the Jura comes an oenological project of intimate devotion: Etienne Thiébaud founded Domaine des Cavarodes in 2007, in Cramans, a stone's throw from Arbois. Much of his philosophy was born of a courageous act - to renounce homogenisation - and to trust in the centuries-old vines and their rarely seen fossil soil. There, among limestone marl margins riddled with small shell fossils - the"lumachelles" - a Pinot Noir was born that tries to be more of a voice than a cry. Guided by a deep respect for the terroir and an almost artisanal relationship with his old plots (between 15 and 115 years old), he approached this wine as a testimony of the place and the vineyard -PinotNoir, of course- under the organic and biodynamic protection that he undertakes with humility and authentic expression.

Winemaking

The production of Cavarodes Côtes du Jura Pinot Noir Les Lumachelles begins with a manual harvest and careful destemming. The grapes undergo a partial semi-carbonic maceration, a delicate method that extracts without fuss and enhances the expression of the terroir. Fermentation then takes place with indigenous yeasts, respecting nuances and without external aggressions. The wine rests for eight to ten months, mostly in stainless steel tanks and a small proportion in old oak vats. No new oak is used, the aim is to keep the wine contained, elegant and in light contact with the lees to round it off.

Taste

The first impression of Cavarodes Côtes du Jura Pinot Noir Les Lumachelles is like peering into a wooded glade: aromas of ripe red cherry and wild strawberries caress the nose, accompanied by a subtle hint of leaf and undergrowth. Then, on the palate, comes a light, subtle elegance: fine tannins, perfectly balanced acidity that structures and sustains without occupying the centre; tart raspberry that dances with a slight echo of soft liquorice, a touch of unusual finesse. The mineral persistence comes in waves: the finish is of a saline coolness that tightens the wine's vibrancy, endowing it with subtle tension and pure vivacity - a liquid reading of Jurassic terroir.

Cavarodes Côtes du Jura Pinot Noir Les Lumachelles does not attempt to inebriate with ostentation, but to invite the palate into an intimate conversation, where each sip reveals stone, fossil, fresh earth and arrested fruit in its purest expression. It is a refined wine, light and digestible, but with character and nerve, that leaves its mark without raising its voice - a delicate elegy to the Jura and to those who seek the true landscape in subtlety.
