Description

Before the vineyard, there was an ideal: Etienne Thiébaud left behind an apprenticeship in Burgundy - with a touch of grand cru - to found, near the Loue River, in 2007, Domaine des Cavarodes, an ode to purity and Jurassic terroir. The idea was born from a unique terroir: the small plot of land at Guille-Bouton in Arbois, where the Chardonnay vines, caressed by soils of blue and grey marl enriched with limestone layers, convey a direct and precise character. Etienne, faithful to his organic and biodynamic philosophy, works with horse-drawn ploughs and accompanies each vine with respect and delicacy. An anecdote - ploughing the furrow in the middle of the night to respect the lunar rhythm during planting - underlines his commitment to be in tune with nature according to the biodynamic calendar.

Winemaking

Cavarodes Arbois Guille Bouton is harvested from whole grapes, gently pressed and only the clean must is selected by static decanting. Fermentation is carried out with indigenous yeasts, without additives, in old barrels -never new- that provide nobility without invading the origin. The wine is aged for 18 months in these used wood barrels, without batonnage, without filtration (except when strictly necessary) and with minimal or no sulphites added. The result is an "ouillé" wine, which respects the filler and allows for a restrained oxygen evolution, providing tension without premature oxidation.

Taste

Visually, Cavarodes Arbois Guille Bouton is pale, almost golden and faint. The nose displays vibrant purity: yellow apple and white flowers give way to subtle fresh almond, all bathed in a chalky minerality, sharp and charmingly austere.

On the palate, Cavarodes Arbois Guille Bouton is taut and direct, with acidic energy that sweeps across the palate like a slender harpist. The saltiness is not just a nuance, it is the backbone of its character: slightly harsh, almost defiant, but with restrained elegance. The bitter-lemony background - citrus zest - and white almond give it a lingering flavour, topped by a note of wet stone that returns to the origin, to the Jurassic terroir from which it was born.

This Jurassic Chardonnay is not gentle; Cavarodes Arbois Guille Bouton is frank and earthy, with restrained sensuality and elegant length.
