Description
In the heart of the Jura, between hillsides covered with old vines and forests that smell of damp and dry leaves, lies the small but vibrant winery of Étienne Thiebaud, a winegrower who has made respect for the soil and time his maxim. Founder of Domaine des Cavarodes, Étienne started with just a few hectares of old vines, many planted before World War II, which he rescued from a local cooperative. From the beginning, his philosophy was clear: minimal intervention, biodynamic agriculture without certification and a constant search for the truth of the terroir. Cavarodes Blanc Cuvé is the fruit of that vision. A blend dominated by Savagnin, subtly complemented by Chardonnay depending on the vintage, grown in loamy soils with limestone veins, typical of the Pupillin and Arbois region, with a harsh continental climate, which imprints character and tension on each cluster.
Winemaking
The grapes for Cavarodes Blanc Cuvé are harvested by hand, with an initial selection in the vineyard and a more demanding selection in the cellar. Spontaneous fermentation with five days of skin maceration. After a slow and respectful pressing, the must ferments with indigenous yeasts in old demi-muids, without temperature control. No sulphur is added at any stage of the process. The ageing of Cavarodes Blanc Cuvé lasts between 12 and 18 months in neutral barrels, without racking or batonage, allowing a light controlled oxidation that gives depth and authenticity to the wine. Bottling is carried out without fining or filtering, preserving all the energy and substance of the wine.
Taste
Cavarodes Blanc Cuvé reveals itself with a nose marked by lively notes of candied lemon, citrus zest and a halo of raw almond. There is a light, barely hinted touch of youthful oxidation, like cut apple that is beginning to brown, but perfectly integrated, without losing freshness. The colour is old gold, dense, with amber reflections that announce its complexity.
On the palate, Cavarodes Blanc Cuvé is ample, unctuous, almost sweet, with a round texture that caresses the palate. There is a slight sensation of sweetness -not of sugar, but of ripe fruit and light honey- that balances the acidic tension of the Savagnin. It is a wine that chews, that fills, that seduces with its gastronomic dimension. Notes of fresh walnut, lemon peel and a saline finish reminiscent of wet stone after rain persist. It is a free, expressive white wine, which does not seek to please everyone, but it is a wine that makes those who understand its language fall in love with it. A radically flavoursome interpretation of the Jura, where nature and precision embrace each other without conflict.
