Description
When Vincent Wallard returned to France after years of winemaking in South America, he brought with him a clear idea: to create a free, pure and sincere white wine. Thus Tonton Blanc was born, a wine that embraces the identity of Chenin Blanc without make-up or shortcuts. The grapes come from limestone-loam soils in plots worked with minimal intervention, where respect for the natural cycle of the vine is absolute. Wallard, true to his radically natural philosophy, decided not to add sulphites, clarify or filter. His motto: let the wine tell its story without interruption. In a particularly slow vintage, he left the must to ferment for more than a year, a bold decision that revealed a mineral and energetic expression of Chenin that seemed to come from the depths of the earth.
Winemaking
Tonton Blanc is made from a direct pressing of hand-picked grapes. Spontaneous fermentation takes place without added yeasts and can last for many months. After fermentation, the wine rests in large oak vats for about a year, where it gains complexity without losing freshness. No SO₂ is added at any time, and bottling is done without filtering, leaving all the essence intact.
Taste
On the nose, Tonton Blanc is clean, vibrant and mineral. Notes of green apple, citrus, beeswax and a background of wet stone appear. The palate is sharp, juicy and electric, with bright acidity that structures the wine without attacking. Its texture is lively, with natural weight but without heaviness. It unfolds with saline freshness, hints of candied lemon, apple peel and a dry, long, herbal finish. A wine with soul, that feels alive in every sip, ideal for those looking for raw emotion in the glass.
