Description

Tissot Poulsard Vieilles Vignes is a wine that encapsulates the essence and tradition of the Jura region of France. This wine is made from 100% Poulsard grapes, a variety indigenous to the Jura, grown in vineyards planted in 1936, 1950 and 1960. The practice of biodynamic viticulture, without the use of herbicides or phytosanitary products, and the certification both organic by Ecocert and biodynamic by Demeter, underline the domaine's commitment to sustainable and environmentally friendly practices.

Elaboration

The production of Tissot Poulsard Vieilles Vignes follows a meticulous process that includes manual destemming, fermentation and maceration for three months in old French oak vats, followed by ageing in 600-litre French oak barrels (with 10% new oak) until bottling in March, with no addition of SO2 from harvest to bottle.

Tissot Poulsard Vieilles Vignes is distinguished by its aromatic richness, presenting a palette of red fruits and spices. Tasting reveals a juicy, crisp and energetic experience, structured by elegant tannins that promise a cellaring capacity of up to a decade. The south-eastern exposure of the vines, the manual harvest, and fermentation in truncated cone-shaped vats followed by ageing in demi-muids for a year, contribute to the complexity and expressiveness of this wine.
