Description
A salty breeze blows from Jerez and, amidst the shadows of century-old casks, the story of Lustau Palo Cortado Península is born. This wine is the child of intuition and mystery, a creation that arises when a fino, during its ageing under a veil of flor, begins to behave in an unexpected way. The oenologist, instead of correcting it, decides to follow its evolution: a brave choice that gives life to this Palo Cortado de Jerez, halfway between the elegance of an amontillado and the intensity of an oloroso. Made exclusively with Palomino Fino grapes from the white albariza soils of Jerez de la Frontera, this wine reflects the uniqueness of the warm, Atlantic terroir of the Marco de Jerez, where tradition is not a static heritage, but a daily decision.
Winemaking
After the harvest, the grapes are fermented in stainless steel tanks, and the wine begins its ageing under a veil of flor as if it were to become fino. However, when this veil disappears naturally, the wine is added to the fortified wine until it reaches 18 degrees, and Lustau Palo Cortado Península undergoes oxidative ageing in the traditional criaderas and solera system for more than 12 years. The ageing takes place in American oak casks that have seen generations of wines in the Bodega de la Emperatriz Eugenia, under humidity and temperature conditions that modulate their slow evolution. This system of oak barrels and constant transfer results in a deep, dry and complex wine that combines freshness with maturity.
Taste
Bright amber in colour with coppery reflections, the Lustau Palo Cortado Península offers a sophisticated and precise nose: toasted hazelnuts, bitter almonds, notes of orange peel and a background of sweet spices such as vanilla and cinnamon. There are also nuances of blond tobacco, smoky touches and a salinity reminiscent of the nearby sea. On the palate it is dry, powerful and enveloping, with a structured passage that combines the sharp elegance of an amontillado with the warmth of an oloroso. Its natural acidity refreshes the palate, while developing notes of toffee, old wood, dried fruits and a long finish that leaves a mineral and saline echo. Perfect with Iberian ham, cured cheeses, foie gras or spicy stews, it is a wine of contemplation, as complex as it is accessible, as old as it is current.
