The NV Amontillado Escuadrilla Solera Reserva which is over 15 years of age reveals some caramel notes, a touch of raisins, and an overall sweet sensation in the nose, complemented by the recurring hazelnut notes, while the palate is very dry, full-bodied, powerful and even has some tannin in the finish. Very persistent. Drink 2013-2018.

Description
Since its beginnings, the Lustau winery has been able to combine the Jerez tradition with a refined and demanding vision of wine ageing. Lustau Amontillado Escuadrilla was born as a tribute to aviation and the bonds of camaraderie that united the air squadrons, an intimate reference to the founder's past as an aviator. This connection with the sky contrasts with the deep roots of its vines in the white albariza soils of Jerez de la Frontera. In this landscape of lime and sun, where the Palomino Fino expresses its most sober and elegant character, Lustau took the decision -not always popular- to extend the ageing process until the wine found its deepest, most mature voice. This is how this Amontillado was born, a symbol of courage in the cellar and precision in the glass.
Winemaking
Made exclusively from Palomino Fino, Lustau Amontillado Escuadrilla begins its life with 4 years of biological ageing in American oak barrels under a veil of flor. This first period gives the wine its dry, saline and ethereal profile. Then, after the natural disappearance of the veil, the wine enters an oxidative ageing process that lasts for another 8 years, acquiring body, complexity and that character that only time can give. The whole process is carried out under the traditional system of criaderas and solera, in the historic Emperatriz Eugenia winery, where the passage of time is measured in aromas, not clocks.
Taste
Lustau Amontillado Escuadrilla has a bright amber colour with coppery reflections, which already anticipates a complex experience. The nose is intense and enveloping: notes of toasted almond, hazelnut, dried orange peel, salted caramel and a subtle touch of smoked wood. There are also echoes of heather honey, dried leaves, and a background of green tea that adds aromatic freshness.
On the palate, Lustau Amontillado Escuadrilla is dry, firm and elegant. The entry is tense, with a restrained acidity that balances the medium volume and a marked salinity. There are flavours of dried fruits, candied citrus peel, and a long aftertaste with notes of sweet spices and blond tobacco. The finish is persistent, slightly bitter and deliciously savoury.
This Lustau Amontillado Escuadrilla is not for absent-minded drinking. It is a wine that demands attention, that opens up in layers and dialogues with the memory. Perfect with cured cheeses, Iberian ham, sautéed mushrooms or even a spicy Thai soup. A Jerez with history, character and a soul between heaven and earth.
