The NV Dry Oloroso Don Nuno is produced from Palomino grapes, fortified to 20%, and aged in American oak botas. Its heady, aromatic nose still has some fruity aromas from the grapes, intermixed with the noble woods, which comes through as a textbook, young Oloroso nose. The medium-bodied palate reveals very clean flavors of roasted nuts and a touch of brandy. It’s a good entry-level Oloroso, with good quality to price ratio. Drink 2013-2015.

Description
In the heart of Jerez de la Frontera, where the albero shines under the sun and the easterly and westerly winds sculpt the character of the wine, Lustau Oloroso Don Nuño of Bodegas Lustau was born. Founded in 1896 by José Ruiz-Berdejo, this historic winery was committed from the beginning to excellence and identity, even when that meant breaking with the status quo. Lustau Oloroso Don Nuño represents that uncompromising fidelity to the deepest style of dry Jerez, made exclusively from Palomino grapes grown on the unmistakable white lands of albariza. This soil, poor in organic matter but rich in limestone, lends concentration, elegance and natural salinity to the wine.
The history of this Oloroso is linked to a bold decision: to separate certain butts whose aromatic intensity exceeded the norm. Instead of softening its profile, it was decided to let it speak out loud, with all its power and character. This is how Lustau Oloroso Don Nuño was born: a complex, dry wine, with a pure oxidative soul, aged without a veil of flor and which sums up the soul of Jerez in every sip.
Winemaking
The production process of Lustau Oloroso Don Nuño begins with the manual harvest of Palomino Fino. After fermentation, the wine is fortified to 20% vol. in order to avoid the formation of flor and to be used exclusively for oxidative ageing. For more than 12 years, Lustau Oloroso Don Nuño is aged in American oak casks following the traditional system of soleras and criaderas, in Lustau's cellars in Jerez. There, oxygen and time do their work, concentrating aromas, polishing edges and building a dense but balanced structure. Each racking adds complexity and persistence, guaranteeing a wine with extraordinary depth and harmony.
Taste
Lustau Oloroso Don Nuño has a dark amber colour with mahogany highlights. The nose is intense, warm and enveloping: notes of toasted nuts, hazelnuts, bitter cocoa and old wood dominate, with hints of dried orange peel, dates, dark caramel and a subtle background of sweet spices and smoke. Nothing about it is fragile: it is a wine that demands attention.
The palate is dry, ample and structured, with an enveloping texture reminiscent of rough silk. Its natural acidity and salinity balance the richness, leaving a long, lingering, slightly bitter finish, with echoes of walnut, toffee and spice. A classic, uncompromising Oloroso that shines in the glass as well as at the table, ideal for cured meats, aged cheeses or simply contemplating the sunset.
