Description
From the historic Sanlúcar de Barrameda, in the heart of the Marco de Jerez, comes Lustau Manzanilla Pasada Manuel Cuevas Jurado, a singular Manzanilla Pasada signed by Lustau under the name of the winemaker Manuel Cuevas Jurado. With barely eighty butts, this wine represents the intimate and artisanal vision of a man who has devoted his life to organic ageing. The idea of bottling his manzanilla came not as a commercial exercise, but as an act of resistance: to preserve the saline and complex soul of fortified wines that age slowly by the Atlantic Ocean. Cuevas Jurado, whose winery is located on Calle Trabajadero, decided to let time and the sea breeze do their work without haste, opting for a longer ageing process than usual. The Palomino Fino grape, grown in albariza soils, breathes the saltpetre of the sea and the humid freshness of the Sanlúcar de Barrameda coast, and gives rise to a unique expression within the Manzanilla-Sanlúcar de Barrameda DO.
Winemaking
The winemaking process of Lustau Manzanilla Pasada Manuel Cuevas Jurado begins with an ageing process under a veil of flor, which lasts for several years. However, unlike young manzanillas, here the flor begins to weaken little by little, allowing a subtle oxidation to nuanced the wine's profile. After going through the traditional criaderas and soleras system in the Cuevas Jurado cellars, this manzanilla pasada matures for approximately seven years, which places it on the threshold between the saline delicacy of a young manzanilla and the oxidative depth of an amontillado. The wine is bottled without excessive fining, in order to preserve its authenticity and lively texture.
Taste
To the eye, Lustau Manzanilla Pasada Manuel Cuevas Jurado has a bright straw yellow, slightly golden hue. On the nose, it offers a symphony of aromas ranging from green apple to raw almond, passing through notes of sea breeze, dry hay and a faint reminiscence of umami broth and green olives. There are also traces of dried mushrooms, tapenade and a delicate perfume of old wood. The palate is sharp, dry, markedly saline, with a lively acidity that adds tension and structure. The palate is agile but deep, leaving a trace of walnut, citrus touches and lingering salinity. Its texture is almost oily, without losing nerve, and culminates in a long finish, with echoes of iodine, dried fruit and an almost marine freshness. A manzanilla that does not seek to please everyone, but rather to thrill those who know how to listen to the murmur of the ocean in a glass of wine.
