The NV Manzanilla Papirusa from Sanlucar de Barrameda has an intense straw color with a smoky nose of roasted nuts. The palate is dry and light, with clean, pungent flavors, showing finesse and good length. Lustau is doing a good job to improve their Manzanillas, working with a good almacenista in Sanlucar. Drink 2013-2014.

Description
In the sun-drenched streets of Sanlúcar de Barrameda, where the Atlantic breeze blows through the whitewashed walls and the bodegas breathe history, Lustau Manzanilla Sanlúcar de Barrameda was born. Its name - "Papirusa", a paper doll evoking tenderness and lightness- was chosen by the founder as a tribute to a childhood spent amid wine casks and the scent of flowers. It is a wine that embodies the courage to respect the traditional without the need for embellishment: 100% Palomino Fino, aged under a veil of flor that not only protects, but transforms.
Sanlúcar, with its temperate climate, constant sea humidity and albariza soils (white, porous and rich in lime), gives the wine a unique saline tension. The D.O. Manzanilla - Sanlúcar de Barrameda is not just a geographical indication; it is a character, a DNA. In this area, the sea is not only heard, it is drunk.
Winemaking
After the harvest, the grapes are gently pressed to obtain a clean must, which ferments in steel tanks before being transferred to traditional American oak casks. There, the biological ageing of Lustau Manzanilla Papirusa begins, under a layer of flor that remains alive throughout its time in the cellar -an average of five years-using the criaderas and solera method. This flor is responsible for its dry, sharp and delicately bitter profile. Finally, it is bottled without aggressive filtering, preserving all its saline essence and natural purity.
Taste
Lustau Manzanilla Papirusa, straw yellow in colour with golden highlights, shines brightly in the glass. Its nose is precise, almost surgical: raw almond, dried camomile, camomile, green apple peel, marsh and sea breeze, with a slightly pungent background reminiscent of iodine and wet stone. Nothing is strident, everything is subtle.
On the palate, Lustau Manzanilla Papirusa 's attack is sharp and dry, with a vibrant acidity that carries flavours of salted almond, lemon zest, fine yeast and a slight green olive bitterness. The body is light, but the taut, nervy structure makes it persistent. It finishes long, with saline echoes, fresh nutty notes and a sharp clean sensation.
Lustau Manzanilla Papirusa is a wine that does not seek to please with sweetness or obvious fruit. It is a tribute to the coast, to the salty silence of the flower, to restrained elegance. Perfect with seafood, Iberian ham or simply as an aperitif. A wine that speaks softly, but leaves a deep impression.
