The NV Fino Jarana, aged in Jerez, has a beautiful, classical Fino nose of chalk, dry hay, dry straw (esparto) and nuts, while the palate is very dry, intense and pungent, long, with a pleasant bitter finish. It’s both intense and fine. Drink 2013-2014.

Description
In the heart of Jerez de la Frontera, between walls that breathe centuries of history and yeasts in suspension, Lustau Fino Jarana is born, a fino that proudly claims the radical purity of the classic style. The history of this wine is intertwined with the audacious vision of Emilia Lustau, who, in the mid-20th century, was determined to take Jerez wines beyond their role as an ingredient for blends. Jarana was born from that same determination: to make a fino that expresses the most naked identity of Palomino and biological ageing under flor. In the albariza soils -white, porous and almost lunar- the vines sink their roots in search of humidity, under a sky where the sun and the east wind act as sculptors of intensity. Just Palomino, unadorned. Only flower, no make-up. Just Jerez, without concessions.
Winemaking
The grapes used to make Lustau Fino Jarana are harvested early, seeking freshness and tension. After a gentle pressing, the must is fermented in stainless steel tanks and fortified at 15% vol. to allow the flor to develop. From there, the slow journey begins in American oak casks under the soleras and criaderas system , for about 4 years. In these half-full casks, the flor acts as a living veil, protecting the wine from oxygen, metabolising nutrients and generating compounds that give rise to aromas of bakery, nuts and that unmistakable saline character. The cellar, strategically oriented and with controlled humidity, allows the flower to express itself fully. Finally, Lustau Fino Jarana is bottled with minimal intervention, seeking to preserve its vibrant and direct character.
Taste
Visually, Lustau Fino Jarana is pale yellow with steely reflections. The nose is precise, sharp and deeply evocative: sourdough bread, raw almonds, dry manzanilla, light touches of chalk and a marine background reminiscent of the salt of the Cadiz salt flats. On the palate, Lustau Fino Jarana is dry to the extreme, with a sharp, saline texture that awakens the palate. The acidity is vibrant, almost electric, and sustains flavours of bitter almonds, lemon zest, fresh yeast and a subtle hint of dried flowers. The finish is long, sharp, with bitter and mineral echoes, leaving an almost surgical sense of cleanliness. It is a fino for purists, for those who seek authenticity, precision and that balance between austerity and depth that only the great wines of Jerez know how to offer. Ideal with Iberian ham, toasted almonds or simply on its own, in the shade of a warm afternoon.
