Description

The story of Louis Jadot Saint-Romain Blanc begins with Louis Jadot's clear intention: to capture the sober, mineral essence of Saint-Romain, a small and somewhat forgotten enclave in the north of the Côte de Beaune. Nestled between spectacular cliffs, this vineyard faces south-southeast, with soils of calcareous marl and clay banks that favour high-precision whites. In a gesture that reflects the maison's respect for the site, the grapes are harvested by hand in smallcrates, preserving the integrity of the Chardonnay grapes and paying homage to a region where the terroir expresses itself with subtlety, without fuss. Years ago, when preparing a plot, a half-buried stone wall was discovered: instead of removing it, they decided to keep it. "Like this wall, the wine resists, expresses and connects", said the winemaker. This phrase has been guiding the spirit of the wine ever since.

Winemaking

The winemaking process of Louis Jadot Saint-Romain Blanc starts with a gentle pressing, followed by fermentation in oak barrels, a third of which are new, providing discretion and structure. Ageing on fine lees lasts about 15 months, enhancing volume and complexity without hindering the natural freshness that the high climate and chalky soil provide. The wood does not dominate here; it accompanies.

Taste

Visually, Louis Jadot Saint-Romain Blanc is pale yellow with green highlights. The nose is precise, restrained: green apple, lemon zest, white peach, almond and a mineral trace almost like wet stone or chalk. When oxygenated, notes of light butter and fine toast appear, the result of its time in oak barrels. The palate is clean and vibrant, with marked acidity and fine texture, with a saline background reminiscent of the soil of origin. Long, dry, and with echoes of citrus, white fruits and tense minerality, this wine does not seek to impress by volume, but by depth and precision. Ideal for dishes such as ceviche, sushi, warm salads or grilled vegetables, but also a meditation in itself. A Burgundian Chardonnay with the soul of stone and the nerve of Altura.
