Description
In the Gard region, Lori Haon, a young winemaker who, at the age of just 21, decided to bring to life his vision of authentic, unfussy wine. At the tender age of 21, Lori acquired Domaine du Petit Oratoire, a 15-hectare estate that has become the canvas of his passion and dedication. Trained in iconic wine regions such as Burgundy, Alsace and Champagne, Lori has imbued his project with a philosophy of absolute respect for the land, eschewing the use of chemicals and synthetics in favour of biodynamic practices that reflect the purity of the terroir.
Le Petit Oratoire Jajatoès is the result of an unexpected circumstance: low white grape harvests led Lori and her team to combine these varieties with those destined for their cuvée "Partouze", giving rise to a light and accessible rosé. This blend includes Garnacha Negra, Viognier and Cinsault, grown in the region's characteristic sandy soils with chalky subsoil. The Mediterranean climate of the Gard, with its unique microclimate in Valliguières, brings an unparalleled freshness to the vines, influenced by a small stream and surrounding mountains that moderate temperatures.
Winemaking
The creation of Le Petit Oratoire Jajatoès is a testament to Lori's dedication to natural winemaking. The grapes undergo a direct pressing, followed by a cold racking that allows the must to clarify naturally. Fermentation is carried out with indigenous yeasts in stainless steel tanks, preserving the essence of the fruit without artificial intervention. This minimalist approach highlights the authenticity of the wine, offering a genuine, uncontrived experience.
