Description
La Senda In Absentia is a red wine made 100% with the Trousseau grape variety, also known as Bastarda or Merenzao, originally from the Jura region in France, but cultivated in different wine-growing areas. The man responsible for its creation is Diego Losada, a Bierzo producer committed to minimal intervention practices both in the vineyard and in the winery. Diego works organically in his vineyards, which are between 60 and 90 years old and are planted in clay and limestone soils, with the presence of quartz, at an altitude of 550 metres above sea level.
Winemaking
The winemaking process follows traditional methods. The grapes are harvested by hand and fermented in chestnut barrels with indigenous yeasts, after a 3-4 day maceration with the skins. Fermentation is completed in used French oak barrels, where the wine rests for 9 months. This wine is bottled without fining, filtration or the addition of sulphur, thus maintaining its natural and authentic character.
Taste
The taste of La Senda In Absentia stands out for its juiciness and freshness. On the nose, the wine offers a rich aromatic palette that includes cherry, blackberry and aromatic herbs. On the palate, the tannins are soft and delicate, providing a pleasant texture that is complemented by a persistent and balanced finish. This wine is a genuine representation of its terroir, with a profile that combines elegance and freshness, ideal for pairing with main dishes of Galician cuisine.
